Mahi-mahi, anyone?

Was watching deep-sea fishing on the boob tube this morning, watching those lucky anglers catch dorito and thinking how much I love mahi-mahi and how long it's been since I last had any. I bought a coconut yesterday and have a bag of dried mango, papaya, and pineapple bits, so for dinner tomorrow night I was thinking I'd get a couple of fresh mahi-mahi filets and simmer them in the coconut water, topped with shredded coconut, and served with rice with the mango, papaya, and pineapple bits. I don't know how the rice will turn out, but it'll be hard--even for me--to eff up the fish.

Jels, you might want to wait to find out how this turns out before inviting me over to cook for you. I usually cook mahi-mahi sprinkled with Old Bay seasoning or Chef Paul Prudhomme's Blackened Redfish Magic but thought I'd experiment with the coconut this time. Gonna make another batch of Brunswick stew shortly 'cause my son may come over this evening, and he really likes the Brunswick stew I make. Which surprized me 'cause he doesn't like tomatoes, but diced tomatoes is one of the primary ingredients.

He seems to put strange flavours together that end up sounding divine!! I don't even know what a Mahi-Mahi is but I want it!!

Wahoo shoot a video of you preparing and cooking fish and put it up on youtube.....that way I can learn to cook them properly! I have good luck with cooking them over a camp fire but anything to do with an oven leaves them a little on the dry side.

See, I told you that you should of gone to Negril! Wahoo teaches cooking lessons in exchange for lap dances. Granted I didn't really care to give him one but now I can make great eggs Benedict.

That just reminded me a the red snapper I ate in Negril with the head and tail still attached, the head was a little crunchy but the rest of the fish was great!

No, Wahoo was eyeballing my red snapper and I was concerned that if I took a picture of my meal it might give him a chance to steal it.

Finally got around to cracking open that coconut...and filleted the index finger of my right hand while separating the coconut from the shell with a sharp knife. Had to put at least twenty dollars in my cuss jar. Probably should have gotten stitches to reattach the inch-long flap, but I'll live. This is the same finger--in the same place--that I gouged deeply on a broken glass in the sink (again probably needing stitches, though I skipped them) in my haste while getting ready to go to a wedding a few some years ago. It healed quickly that time, as I recall. My left index finger, my right knee, and the fourth toe of my left foot--the most accident-prone parts of my body! If I had a wife to do my kitchen work and house cleaning, these mishaps wouldn't happen!

The meal was a semi-success. The grocery store I shopped at didn't have any mahi-mahi, and I didn't want to go from place to place till I found some, so I used fresh Atlantic cod instead. I didn't know coconut milk burns so quickly, and the fish burned on the bottom, but not enough to have to toss it all in the garbage. I didn't burn the rice w/mango, papaya, and pineapple bits, which turned out rather well, I think, and was quite tasty. Still have a bowl left over, which will make a nice side dish for another meal some night this week.
